Victor Steiner was born on September 1, 1790. His parents were Simon Victor Steiner, born on June 17, 1762 and his wife Miriam Marianne, née Einstein, born on March 10, 1769 in Laupheim. After Josef Lauterwein's retirement and the resolution of disputes over brewing rights with local innkeepers in 1852, Victor Steiner took over the castle brewery as sole owner in 1853 and turned it into a modern, efficient brewery with extensive building work (installation of a brew kettle room in the eastern part of the castle - conversion and extension of the engine house). After Victor Steiner's death, his children took over the property until 1894, when his son Kilian Steiner acquired the castle from his siblings and modernized it by installing a central heating system. The boiler house at the castle brewery was enlarged and a malt house was built in 1896. Kilian Steiner set up a farm for his son Adolf Wohlgemuth, which he developed into an experimental and model farm. A large English-style landscape garden was created at the foot of the Schlossberg. In 1955, the castle brewery gave up beer production.
